Much Less Stevia Extract is Required to Provide the Same Sweetness as Sucrose.

San Antonio TX. The Global Stevia Institute (GSI) says that the high-purity stevia leaf extract is an intense sweetener that can be up to 350 times sweeter than sucrose (sugar). However, says the GSI, it does not provide bulk or other functional benefits that nutritive sweeteners like sugar provide in foods and beverages. This might be a challenge when you replace a nutritive sweetener for stevia extract in a recipe, in order to reduce calories; in some cases, the total replacement or substitution might not be feasible. For example, sugar controls the formation of ice crystals in frozen desserts and improves the smoothness and flavor of ice cream, prevents spoilage in jellies and preserves, speeds the growth of yeast in breads (which contributes to fluffiness), and promotes browning during baking and cooking. Therefore, replacing sugar with stevia extract in some recipes may require additional modification to the recipes. However, there is still the option to blend stevia extract with a nutritive sweetener like sugar to simultaneously reduce calories while maintaining the functional and taste benefits.

Since the stevia extract is so much sweeter than sugar, it is not always a one-for-one substitution when using it in recipes. For example, if you need one cup of sugar in a recipe, you may actually need only ¼ cup or less of stevia extract to get the same level of sweetness. You can always consult the manufacturer’s conversion chart to start.

Sylvia Klinger, Registered Dietitian of the Hispanic Food Communications Inc. recommends starting with stevia extract recipes that are already developed. “Once you feel a little more comfortable and confident – when using stevia extract in your kitchen – you can try some of your own recipes,” she says.

The GSI states that stevia extract is available in many ways. Sometimes it is the sole sweetener and other times it is blended with other zero calorie sweeteners. Often it is blended with sugar in reduced-calorie foods and beverages.  This is the case of Svetia® Calorie-Free Sweetener, which blends its main ingredient, stevia extract, with cane sugar as a bulking agent or carrier because of its natural origin and because its glycemic index is lower than the one of dextrose and maltodextrin, providing an excellent profile of flavor and natural sweetness. Cane sugar as bulking agent provides so few calories per serving that Svetia® Calorie-Free Sweetener meets the Food and Drug Administration’s criteria for no-calorie foods (less than 5 calories per serving).
